While it isnt an official word by Square Enix, one of their notable employees, Yoshinori Kitase, has been speaking about the feasibility of remaking Final Fantasy VII.
The technology available today lends itself to the idea of a remake of the legendary game but the manpower and development time would still be considerably long.
Kitase spoke on the subject:

It is no secret that Final Fantasy XIII has had a long developing process, not just in terms of manpower and hours but also has been quite an expensive venture too.
It would make sense for the company to look at ways to cut costs in their flagship franchise. Yet, that doesnt extend to moving the series to handhelds though.
Yoshinori Kitase spoke on the issue:

The director of Final Fantasy XIII, Motomu Toriyama, commented recently on the difficulty of remaking Final Fantasy VII and its unique style for the current next gen consoles.
Difficult it may be, but that hasnt stopped other key players at Square Enix voicing their approval or at least interest in a remake of FFVII, such as the producer of Final Fantasy XIII, Yoshinori Kitase, who had this to say:

The producer of Final Fantasy XIII, Yoshinori Kitase, has heaped praise upon the Sony console, going as far as to say that it helped envision FFXIII.
He also hinted that DLC isnt being looked at for the game, but admitted that there were a lot of ideas that were considered and ultimately discarded.
Regarding the PS3, Kitase commented:

Yoshinori Kitase, the producer of Final Fantasy XIII, has been speaking in a few interviews regarding the game and keeping interest in FFXIII in the Western mind, as the company gear up to release the game in the West this March.
The Japanese theme song proved to contain difficulties when translating it into English, so Square Enix decided to go with another approach; an experiment:
“We tried to translate the song [Kimi Ga Iru Kara], but the singer had difficulties with that,”
